Basic lacto-fermenting techniques - making Kraut History and world practices of fermentation - the oldest known preservation technique. This class will cover the principals behind lacto-fermentation and how to make a basic kraut recipe. This is a hands-on class and students will taste a variety of lacto-ferments. Seating is limited. Pre-registration is required.
