Grease Collection Device
One method of prevention is to ensure that food preparation facilities have a collection device, whether a grease trap or grease interceptor, for kitchen waste to prevent it from entering the sanitary sewer system. The FOG program also monitors the companies that clean the traps, and helps ensure that all waste haulers and disposal facilities are in compliance with regulations from the Texas Commission on Environmental Quality.
Residents need to make sure that they properly dispose of fats, oils, grease, and other items that can clog plumbing to prevent costly damage and overflows.

Tips to Prevent Sewer Overflows
- Do not pour grease products into sinks or toilets
- Place oils and grease into heat-resistant bags or containers before placing in trash
- Scrape fats, grease, and food from plates and cooking utensils into the trash
- Use basket strainers in sinks to catch food particles and empty them into the trash
